Slices of juicy cod in a delicious tomato sauce cooked in the oven is great everyday dish. Serve with potatoes, rice or bulgur.

800 g cod fillets without skin

1 onion

3 boats garlic

1/2 green squash

4 tablespoons olive oil

1 can chopped canned tomatoes

1 tablespoon tomato paste

1 dl (cup) water

1/2 vegetable bouillon cube

1 tsp salt

1/2 teaspoon ground pepper

12 seedless black olives

1/2 dl (cup) flat-leaf parsley
How to

Preheat oven to 180 ° C.

Cut onion and zucchini into small pieces. Peel the garlic and finely chop it.

Heat oil in a deep frying pan and fry the onion, garlic and squash until soft and shiny.

Pour the chopped tomatoes, tomato paste and broth. Boil and season with salt and pepper.

Cut the fish into portions, remove any bones and dry with paper towel. Season with salt and pepper.

Pour tomato sauce into a casserole dish and add the fish pieces well into the sauce.

Sprinkle olives around.

Place the dish in oven for 10-15 minutes, depending on the thickness of the fish pieces. The fish is done when it is firm and flakes when you press on it.

Chop the parsley. Sprinkle with chopped parsley and serve piping hot with your desired accessories.
