Merry Christmas!
In Norway we celebrate Christmas on Christmas Eve – Dec 24. I spent the evening with my closest family and we had a wonderful time. Woke up early, eat breakfast and watched christmas movies. There’s something special about waking up on Christmas Eve, walking down the stairs, seeing the Christmas tree and sitting in front of the warm fireplace.
The power went out 3 times that night, so we sat unwrapping presents with the only light coming from the candles surrounding us.
I am a vegetarian and during the holidays I tend get a lot of questions about what I eat during christmas. This year I decided to be a bit more creative and made a vegan feast roast (recipe coming tomorrow)
